I learned this from my mom!
RECIPE: Banana Bread with Crunchy Brown Sugar Topping
Prep time: 15 minutes (max)
Baking time: 50-60 minutes
** Jock’s Tips: Use 1/3 less sugar and add some agave syrup instead. Also for gluten-free alternatives, use a gluten-free flour substitute. If you’d like to have chocolate chips in the bread, use 1/3 cup sugar.
Ingredients:
1/2 cup margarine
1 cup white sugar
1 egg
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
2 large or 3 small bananas
3 tbsp. milk IF NEEDED
2 tbsp. brown sugar crumble for top of bread.
Directions:
- Grease a loaf baking pan. Set aside.
- Mix margarine, sugar, egg and bananas in onebowl.
- Mix flour, baking powder and baking soda inanother bowl. Add cinnamon for taste (optional)
- Add dry to wet and stir until mixed thoroughly.
- Put into baking pan and lightly sprinkle top of theloaf with brown sugar.
- Bake for 1 hour at 350 degrees. Check after 45minutes. Stick a toothpick in and if it comes out clean, then the loaf is done. Otherwise, put it in for additional 5 minutes at a time until cooked.
Rolling Pin Revelations
If you didn’t get a chance to see Episode 6: How to Make Gingerbread Hockey Players then you might want to check it out so you can really appreciate this post. See, I don’t own a rolling pin. I had to “MacGyver-style” it and improvise. Here’s what I tried.
Glass Vases – Cylinder-Shaped
Least favourite choice.
Not suitable for glass table tops.
Not strong enough to handle the massive strength of the master-dough-roller.
Often accompanied by the sound of, “crack” or other expletives.
Avoid at all costs.
Peanut Butter Jars
Suitable if you’re REALLY in a jam (HA!!!!!! That’s funny… peanut butter… jam… sometimes I think I’m really funny!)
The only problem with using peanut butter jars is that the lids leave race track marks in your dough.
But… if you’re stuck… (HA! Stuck… ) then give it a try.
Aerosol Sunscreen or Hairspray Containers
My absolute FAVOURITE choice for a rolling pin.
Durable.
Strong.
Educational (have you ever really had the opportunity to examine a can?)
NO track marks.
Now… I have also learned about using flour to ensure your dough doesn’t stick to your rolling implement. I know, this is “old news” but this jock, is a true rookie in the kitchen and is just figuring out the drills!
Signing off,
The Jock
